Lamb and Leek Pie

Ingrediënten
- unsalted butter
- leeks
- fresh thyme leaves
- lard
- water
- plain flour
- icing sugar
- fine sea salt
- medium egg
- boneless lamb leg
Bereidingswijze
- Place 25 g butter, leeks and thyme in mixing bowl then chop 3 sec/speed 6. Scrape down sides of mixing bowl with spatula then chop again 3 sec/speed 6. Scrape down sides of mixing bowl with spatula then chop again 5 sec/speed 6. Scrape down sides of mixing bowl with spatula then sauté 8 min/100°C/speed 1. Transfer to a bowl and set aside to cool. Clean mixing bowl.
- Place remaining 75 g butter, lard and water in mixing bowl then heat 3 min/100°C/speed 1. Transfer to a jug and set aside. Preheat oven to 220°C.
- Place flour, sugar and ½ tsp salt in mixing bowl then mix 15 sec/speed 4.
- Add reserved lard mixture and 1 egg, mix 20 sec/speed 3 then knead Dough /2 min.
- Place lamb, parsley, mint, pepper and remaining 1 tsp salt in mixing bowl then pulse Turbo/1.0 sec/2-3 times until roughly chopped. Transfer to pastry case and spread evenly then arrange reserved leeks over lamb. Fold pastry overhang over filling and brush surface with 1 beaten egg.
