Lamb Chops with Ratatouille, Beans and Potato Gratin

Ingrediënten
- unsalted butter
- olive oil
- garlic cloves
- fresh thyme leaves
- ground black pepper
- lamb rack
- fine sea salt
- garlic cloves
- floury potatoes
- whole milk
Bereidingswijze
- Preheat oven to 160°C. Grease 6 ramekins (200 ml each) with butter.
- Place 30 g olive oil, 1-2 garlic cloves, thyme and 1 tsp pepper in mixing bowl then chop 10 sec/speed 7. Place lamb rack in a baking dish then pour garlic mixture over lamb rack. Season to taste with 1-2 tsp fine sea salt and rub marinade in well. Heat a large frying pan over medium-high heat and sear lamb rack for 3-5 minutes on each side until golden brown. Transfer to baking dish and roast for 40-50 minutes until golden brown. Meanwhile, continue with recipe.
- Place 2 garlic cloves in mixing bowl and chop 2 sec/speed 8.
- Add potatoes and chop 6 sec/speed 4.
- Add milk, cream, nutmeg, 1½ tsp salt and ¼ tsp pepper then mix 5 sec//speed 2.5. Divide potato mixture between prepared ramekins and pour liquid evenly over the top. Bake potato gratins with lamb rack for a further 35 minutes (160°C). Meanwhile, rinse mixing bowl and continue with recipe.
