Ingrediënten

Bereidingswijze
- Finely grate zest and juice lemons. Set zest aside. Place 80 g lemon juice, 80 g sugar, 40 g butter, curry powder, 1 egg and 1 egg yolk in mixing bowl then start Thicken /80°C. Transfer to an ice cube tray and freeze for 2 hours. Clean and dry mixing bowl.
- Preheat oven to 180°C. Grease a 12-hole muffin tray with butter then divide pine nuts between the 12 holes.
- Place remaining 120 g sugar and 15 g reserved lemon zest in mixing bowl then grind 10 sec/speed 10. Scrape down sides of mixing bowl with spatula.
- Add 3 eggs and 1 reserved egg white then mix 3 min/speed 3.5.
- Add flour, remaining 120 g butter and baking powder then mix 1 min/speed 3.5. Fill muffin tray holes with mixture to almost ½ their capacity.
