Ingrediënten
- egg whites
- caster sugar
- cornflour
- whole milk
- rose water
- white chocolate
- liquid caramel
- edible rose petals
Bereidingswijze
- Place egg whites, 140 g sugar and 5 g cornflour in mixing bowl, heat 4 min/70°C/speed 2. Insert butterfly whisk, then whip 5 min/speed 3.5. Remove butterfly whisk. Transfer to a bowl and set aside.
- Place milk and rose water in mixing bowl then start Warm Up /75°C/speed 2. Start Open Cooking/15 min/75°C. Using 2 tablespoons, form 1 quenelle with the meringue mixture and gently place in milk. Repeat, placing 3 quenelles in mixing bowl at one time. Gently turn quenelles over then cook for a further 3 minutes. Using a slotted spoon, transfer a plate lined with paper towel. Repeat with remaining egg white mixture. Transfer to fridge to chill.
- Add remaining 50 g sugar, white chocolate and cornflour then start Thicken /100°C. Divide white chocolate cream between 6 deep dishes and place 1 quenelles on each. Decorate with liquid caramel and fresh or dry rose petals then serve.
