Mango Cheesecakes
These tropical mango cheesecakes combine fresh mango flesh with rich cream cheese atop a crunchy biscuit base. Ingredients
- butter
- digestive biscuits
- nuts
- brown sugar
- cream cheese
- cream
- caster sugar
- vanilla sugar
- salt
- egg
Instructions
- Place butter, digestive biscuits, nuts and brown sugar in mixing bowl then crush 10 sec/speed 5. Divide crumb mixture between holes in Thermomix® Nester. Use a spoon or fingers to press crumb mixture down.
- Place cream cheese, cream, sugar, vanilla sugar, salt and egg in mixing bowl then mix 1 min/speed 4. Pour cheesecake filling over crumb base in Thermomix® Nester. Cover Thermomix® Nester with heat-resistant cling film and place in Varoma dish. Clean mixing bowl.
- Place water in mixing bowl, set Varoma in position and steam 22 min/Varoma/speed 1. Remove Varoma, remove Varoma lid and set aside uncovered to cool a little. Discard water and continue with recipe.
- Place mango in mixing bowl then chop 10 sec/speed 10. Add sugar, lime juice, butter and egg then start Thicken /80°C. Top each cheesecake with 2 tbsp mango curd. Allow cheesecakes to cool completely, then refrigerate for at least 2 hours before serving chilled.
