Ingredients

  • unsalted butter
  • digestive biscuits
  • whole mixed nuts
  • brown sugar
  • cream cheese
  • double cream
  • caster sugar
  • natural vanilla extract
  • fine sea salt
  • medium egg

Instructions

  1. Place butter, biscuits, nuts and sugar in mixing bowl then crush 10 sec/speed 5. Divide crumb mixture between holes in Thermomix® Nester. Use a spoon or fingers to press crumb mixture down.
  2. Place cream cheese, cream, sugar, vanilla extract, salt and egg in mixing bowl then mix 1 min/speed 4. Pour cheesecake filling over crumb base in Nester and cover with heat-resistant cling film. Place Nester on Varoma tray, insert into Varoma dish and cover with Varoma lid. Clean mixing bowl.
  3. Place water in mixing bowl, place covered Varoma into position and steam 22 min/Varoma/speed 1. Remove Varoma and set aside without lid to cool a little. Empty mixing bowl and continue with recipe.
  4. Place mango in mixing bowl and blend 10 sec/speed 10. Scrape down sides of mixing bowl with spatula.
  5. Add sugar, lime juice, butter and egg then start Thicken /80°C. Divide between Nester holes, spreading evenly over cheesecakes. Leave cheesecakes to cool completely then refrigerate for at least 2 hours. Carefully remove from Nester using a spoon and serve.
