Mango Cheesecakes

Ingredients
- unsalted butter
- graham crackers
- nuts, whole
- brown sugar
- cream cheese
- heavy whipping cream
- baker's sugar
- vanilla extract
- salt
- egg
Instructions
- Place butter, graham crackers, nuts and brown sugar into mixing bowl and crush 10 sec/speed 5. Divide crumb mixture between Thermomix® Nester cups. Use a spoon or fingers to press mixture down to form a compact layer in each cup. Place Thermomix® Nester onto Varoma tray. Insert Varoma tray into Varoma dish and set aside.
- Place cream cheese, whipping cream, sugar, vanilla, salt and egg into mixing bowl and mix 1 min/speed 4. Pour filling evenly over crumb base in Thermomix® Nester. Cover Thermomix® Nester with parchment or heat-resistant cling wrap and secure Varoma lid. Clean mixing bowl.
- Place water into mixing bowl, set Varoma into position and steam 22 min/Varoma/speed 1. Remove Varoma, remove Varoma lid, lifting away from you and set aside uncovered to cool a little. Discard water and continue with recipe.
- Place mango into mixing bowl and chop 10 sec/speed 10. Add sugar, lime juice, butter and egg and start Thicken /175°F. Top each cheesecake with 2 tbsp mango curd. Allow cheesecakes to cool completely, then refrigerate for at least 2 hours before serving chilled.
