- fresh mango flesh

- vanilla quark
- caster sugar
- whipped cream stabiliser (optional)
- fresh basil leaves
- fresh parsley leaves
- garlic clove
Bereidingswijze
- Place peaches and mango in mixing bowl and chop 1 sec/speed 4. Place a bowl on mixing bowl lid, weigh in 50 g peach juice and biscuits and set aside. Transfer mango mixture to bowl with digestives, mix well then transfer to 4 serving glasses or bowls and set aside.
- Insert butterfly whisk. Place cream, vanilla quark, sugar and stabiliser (if using) in mixing bowl then mix 1 min 30 sec/speed 3. Remove butterfly whisk and transfer cream to 4 serving glasses or bowls. Transfer to fridge and chill until needed. Clean mixing bowl and continue with recipe.
- Place basil, parsley and garlic in mixing bowl then chop 3 sec/speed 7.
- Line Varoma tray with lightly moistened baking paper then insert in Varoma dish. Place rice and water on baking paper and sprinkle with 1 tsp salt. Cover with Varoma lid and set aside.
- Place onions, olives, capers, red pepper and oil in mixing bowl then chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula then sauté 3 min/120°C/speed 1.
