Ingrediënten

  • semolina
  • plain flour
  • medium eggs
  • unsalted butter
  • ground turmeric (optional)
  • semolina (optional)
  • whole milk
  • caster sugar
  • dried instant yeast
  • fine sea salt

Bereidingswijze

  1. Place semolina, butter, turmeric (if using), 50 g flour and 1 egg in mixing bowl then mix 20-30 sec/speed 3.5. If dough is too sticky, add 1 Tbsp semolina and mix again 20 sec/speed 3.5. Transfer to a lightly-floured surface, combine then set aside. Clean mixing bowl.
  2. Place milk, sugar and yeast in mixing bowl and heat 2 min/37°C/speed 1.
  3. Add 560 g flour, 2 eggs and salt in mixing bowl then knead Dough /3 min. Meanwhile, line a baking tray with baking paper and grease Varoma with butter then set aside.
  4. Tip out dough onto a lightly-floured surface, divide into 12 equal pieces (approx. 75 g each) then shape into balls. Place 6 pieces on prepared baking sheet, cover with a tea towel or cling film. Place remaining 6 pieces on Varoma tray, ensuring some holes remain uncovered for steam to circulate. Cover Varoma and set all buns aside in a warm place to rise for 25 minutes. Meanwhile, clean mixing bowl and continue with recipe.
  5. Preheat oven to 200°C.
