Ingrediënten

  • plain flour
  • unsalted butter
  • golden caster sugar
  • fine sea salt
  • large egg
  • fruit mincemeat
  • golden caster sugar
  • egg whites
  • fine sea salt

Bereidingswijze

  1. Place flour, butter, 20 g golden caster sugar and salt in mixing bowl then chop 10 sec/speed 8.
  2. Add egg and mix 20 sec/speed 4 until combined. Tip out, form into a flattened ball then wrap in cling film and place in fridge for 30 minutes. Meanwhile, preheat oven to 180°C and clean mixing bowl.
  3. On a lightly floured surface, roll out pastry thinly (3 mm) then cut tart bases using a pastry cutter (approx. 7 cm). Place pastry bases in a tart tin and fill each with 1 Tbsp of fruit mincemeat. Bake for 15 minutes (180°C) until golden.
  4. Place sugar in mixing bowl and grind 15 sec/speed 10.
  5. Insert butterfly whisk. Add 4 egg whites and salt in mixing bowl then whisk 10 min/37°C/speed 3.
