Moroccan Lamb with Couscous

Ingrediënten

- leek
- olive oil
- garlic cloves
- tinned chopped tomatoes
- fine sea salt
- ground black pepper
- dried bay leaf
- fresh thyme
- harissa paste
Bereidingswijze
- Place onion, leek, 40 g oil and garlic in mixing bowl then chop 20 sec/speed 4. Scrape down sides of mixing bowl with spatula and sauté 5 min/120°C/speed 1.
- Add tinned tomatoes, salt, pepper, bay leaf, thyme and harissa paste then cook 4 min/100°C//speed 1.
- Add water and insert simmering basket. Into simmering basket weigh chickpeas then turnip. Place lamb in Varoma dish and add 10 g olive oil. Stir with spatula to coat lamb and grease Varoma dish. Place Varoma into position then steam 22 min/Varoma//speed 1. Meanwhile prepare couscous.
- Place a bowl on mixing bowl lid. Weigh into bowl couscous, ¼ pepper and a pinch of sea salt. Pour boiling water over it, cover with cling film, then set aside to soak for 5 minutes.
- Place Varoma into position. Place carrots and courgettes in Varoma dish. Place couscous and sultana mix on Varoma tray and steam again 10 min/Varoma//speed 1.
