Ingrediënten

  • sesame seeds
  • linseeds
  • pumpkin seeds
  • sunflower seeds
  • chia seeds
  • buckwheat flour
  • bicarbonate of soda
  • fine sea salt
  • ground black pepper
  • walnut halves

Bereidingswijze

  1. Place chia seeds in mixing bowl and grind 10 sec/speed 10.
  2. Add flour, bicarbonate of soda, salt and pepper then mix 10 sec/speed 3. Transfer to bowl with seeds and set aside.
  3. Place walnuts and hazelnuts in mixing bowl then chop 2 sec/speed 5. Transfer to bowl with dry ingredients.
  4. Place water, oil, maple syrup and vinegar in mixing bowl then mix 10 sec/speed 3. Transfer to bowl with dry ingredients then mix well to combine. Cover with greased cling film and leave to rest for 30 minutes. Meanwhile, preheat oven to 150°C and grease a loaf tin (900 g/2 lb).
  5. After resting time, transfer dough to prepared tin and sprinkle with 1 tsp linseeds, 1 tsp pumpkin seeds and 1 tsp sunflower seeds. Bake for 60-70 minutes (150°C) until a skewer inserted in centre comes out clean. Leave in tin to cool for 10 minutes then transfer to a wire rack to cool completely.
