Mushroom and Cannellini Bean Soup

Ingrediënten
- dried wild mushrooms
- boiling water
- onions
- unsalted butter
- tinned cannellini beans
- liquid vegetable stock
- fresh sage leaves
- fine sea salt
- ground black pepper
Bereidingswijze
- Place a bowl on mixing bowl lid then weigh in mushrooms and boiling water. Remove from lid and set aside to soak for 5 minutes then drain through a fine sieve, reserving soaking water.
- Place onions in mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add butter and reserved drained mushrooms then cook 5 min/100°C/speed 1.
- Add cannellini beans, vegetable stock, sage and reserved mushroom soaking water then cook 15 min/100°C/speed 1.
- Add salt and pepper then blend 1 min/speed 5-9, increasing speed gradually (see tip).
