Ingrediënten

  • sunflower seeds
  • walnut halves
  • hazelnuts
  • low-fat yoghurt
  • olive oil
  • medium eggs
  • bicarbonate of soda
  • fine sea salt
  • linseeds
  • quinoa flakes

Bereidingswijze

  1. Preheat oven to 180°C then grease a loaf tin (10 cm x 20 cm) and sprinkle with quinoa flakes.
  2. Place sunflower seeds, walnuts and hazelnuts in mixing bowl then grind 30 sec/speed 7. Scrape down sides of mixing bowl with spatula.
  3. Add yoghurt, oil, eggs, bicarbonate of soda and salt then mix 20 sec/speed 5. Finish mixing with spatula if necessary.
  4. Add linseeds and mix 20 sec/speed 5. Transfer to prepared tin, sprinkle with 1 Tbsp quinoa flakes and bake for 40 minutes (180°C). Transfer to a wire rack to cool completely then cut in slices and serve.
