Ingrediënten

  • shortcrust pastry

  • oil
  • bacon lardons
  • sour cream
  • medium eggs
  • caraway seeds
  • fine sea salt

Bereidingswijze

  1. Roll out pastry until 5 mm thick and use it to line a fluted tart ring or suitable tin for a quiche (Ø 28 cm). Prick the base with a fork, line with baking paper and weigh down with baking beans then blind bake 25-30 minutes (180°C) until lightly golden. Meanwhile, continue with recipe.
  2. Place 400 g onions and 25 g oil in mixing bowl then chop 2 sec/speed 6. Scrape down sides of mixing bowl with spatula then cook 15 min/120°C//speed . Transfer to a large bowl and leave to cool to room temperature.
  3. Place remaining 400 g onions and 25 g oil in mixing bowl and chop 2 sec/speed 6. Scrape down sides of mixing bowl with spatula then cook 15 min/120°C//speed . Transfer to bowl with reserved cooked onions and leave to cool to room temperature. Once pastry case is lightly golden, remove from oven and set aside to cool.
  4. Place bacon lardons in mixing bowl and saute 10 min/120°C//speed . Transfer to bowl with onions and leave to cool to room temperature.
  5. Place sour cream, eggs, caraway seeds and salt in mixing bowl then mix 15 sec/speed 4.
