Orange Caramel Choux Puffs
Delicate choux pastry puffs filled with orange caramel cream, perfectly executed in the Thermomix TM7 for professional patisserie results at home.

Ingrediënten
- water
- unsalted butter
- fine sea salt
- strong white bread flour
- medium egg
- whole milk
- caster sugar
- egg yolk
- orange
- cornflour
Bereidingswijze
- Place water, butter and salt in mixing bowl then bring to the boil 5 min/100°C/speed 1.
- Add flour and mix 20 sec/speed 4. Remove mixing bowl and set aside to cool for 10 minutes. Meanwhile, preheat oven to 200°C and line a large baking tray with baking paper or a silicone baking mat.
- Add eggs and mix 45 sec/speed 5. Scrape down sides of mixing bowl with spatula then mix again 20 sec/speed 5.
- Transfer to a piping bag fitted with a Ø 10 mm nozzle and pipe approx. 24 balls (walnut-sized) onto prepared baking tray, leaving 5 cm space between each (see tip). Brush gently with remaining beaten egg. Bake for 20-25 minutes (200°C) until puffed up and golden brown. Meanwhile, clean mixing bowl and continue with recipe.
- Place milk, cream, sugar, cornflour, egg, egg yolk, orange zest and vanilla extract in mixing bowl then start Thicken /100°C. Transfer to a bowl, cover with reusable wrap or cling film so that it is in contact with the surface of the crème pâtissière and leave to cool to room temperature.
