Ingrediënten

  • chicken thighs, skin on, bone in
  • garlic cloves
  • coriander seeds
  • dried oregano
  • ground cumin
  • fine sea salt
  • orange juice
  • orange
  • pitted green olives
  • onions

Bereidingswijze

  1. Preheat oven to 200°C. Place chicken thighs in a deep ovenproof dish (like 'Betty' stoneware casserole dish with lid) then set aside.
  2. Place garlic, coriander, oregano, cumin, salt and orange juice in mixing bowl then grind 10 sec/speed 8. Scrape down sides of mixing bowl with spatula then grind again 5 sec/speed 10. Add to oven-proof dish and rub into chicken thighs then top each thigh with a slice of orange. Scatter over green olives then cover dish with baking paper.
  3. Bake for 60 minutes (200°C) until cooked through, removing baking paper for last 15 minutes to brown chicken. After 35 minutes, prepare rice.
  4. Place onions, carrots and olive oil in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula then sauté 5 min/120°C/speed 1. Transfer to a bowl and set aside.
  5. Place water and salt in mixing bowl. Insert simmering basket and weigh in rice, raisins and onion mixture. Mix well with spatula and rinse 10 sec/speed 4 then steam 16 min/100°C/speed 4. Remove simmering basket with aid of spatula and transfer rice to a serving dish.
