Pecan Nut Ice Cream with Corn and Vanilla

Ingrediënten
- milk
- double cream
- soft brown sugar
- pecan nuts
- sweetcorn, tinned
- vanilla pods
- egg yolks
Bereidingswijze
- Place milk, cream, sugar, nuts, sweetcorn, vanilla pods and seeds in mixing bowl then cook 10 min/100°C/speed 1.
- Remove vanilla pods and blend 1 min/speed 10 then strain mixture through a fine sieve into a bowl below.
- Place strained mixture back into mixing bowl, add egg yolks then cook 4 min/80°C/speed 2.
- Transfer mixture to a shallow freezer-proof container. Leave to cool for 30 minutes then freeze overnight or for at least 10 hours.
- To serve, remove from freezer and leave at room temperature for 5-10 minutes, then tip out and cut into squares (3 cm x 3 cm). Place half the frozen squares in mixing bowl and churn 10 sec/speed 9, then beat 10 sec/speed 6. Transfer ice cream to a serving bowl.
