Penne with Mussels

Ingrediënten
- fresh flat-leaf parsley
- water
- fresh mussels
- extra virgin olive oil
- shallots
- garlic cloves
- fresh red chilli (optional)
- dry white wine (optional)
- cherry tomatoes
- tomato purée
Bereidingswijze
- Place parsley in mixing bowl and chop 3 sec/speed 7. Transfer to a bowl and set aside.
- Place water in mixing bowl. Place cleaned mussels in Varoma dish, set Varoma in position and steam 15 min/Varoma/speed 1. Remove Varoma and check that mussels have all opened. If not, remove open mussels and transfer to a bowl, set Varoma back in position and steam a further 5-10 min/120°C/speed 1. Remove Varoma, discard any mussels that remain closed, transfer open mussels to bowl and set aside. Strain cooking liquid through a fine mesh sieve into another bowl and set aside.
- Place extra virgin olive oil, shallots, garlic and red chilli (if using) in mixing bowl and chop 7 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Sauté 3 min/120°C/speed 1.
- Add white wine (if using) and cherry tomatoes and cook 2 min/100°C/speed 1.
