Ingrediënten
- pink peppercorns
- white peppercorns
- black peppercorns
- unsalted butter
- shallots
- brandy
- beef stock
- ground black pepper
- cornflour
- double cream
Bereidingswijze
- Place peppercorns in mixing bowl and crush 10 sec/speed 7. Transfer to a bowl and set aside.
- Place butter and shallots in mixing bowl and chop 5 sec/speed 5. Sauté 5 min/120°C/speed 0.5.
- Add brandy and cook 3 min/100°C/speed 1.
- Add stock, reserved crushed peppercorns and ground black pepper then heat 8 min/100°C/speed 1.
- Add dissolved cornflour and heat 2 min/100°C/speed 1.
