Ingrediënten

  • pink peppercorns
  • white peppercorns
  • black peppercorns
  • unsalted butter
  • shallots
  • brandy
  • beef stock
  • ground black pepper
  • cornflour
  • double cream

Bereidingswijze

  1. Place peppercorns in mixing bowl and crush 10 sec/speed 7. Transfer to a bowl and set aside.
  2. Place butter and shallots in mixing bowl and chop 5 sec/speed 5. Sauté 5 min/120°C/speed 0.5.
  3. Add brandy and cook 3 min/100°C/speed 1.
  4. Add stock, reserved crushed peppercorns and ground black pepper then heat 8 min/100°C/speed 1.
  5. Add dissolved cornflour and heat 2 min/100°C/speed 1.
