Homemade Peshwari naans filled with coconut and almonds, perfectly kneaded by the Thermomix TM7 for soft, fluffy results every time.

Ingrediënten

  • strong white bread flour
  • plain yoghurt
  • milk
  • vegetable oil
  • caster sugar
  • fine sea salt
  • dried instant yeast
  • blanched almonds
  • desiccated coconut
  • sultanas

Bereidingswijze

  1. Place flour, yoghurt, milk, oil, sugar, salt and yeast in mixing bowl then mix 20 sec/speed 3. Knead Dough /3 min. Meanwhile, grease a large bowl with oil. Transfer kneaded dough to prepared bowl. Cover with cling film and leave in a warm place until doubled in size (approx. 1-2 hours). Meanwhile, clean mixing bowl and prepare filling.
  2. Place almonds in mixing bowl and grind 15 sec/speed 10. Scrape down sides of mixing bowl with spatula.
  3. Add coconut and sultanas then mix 10 sec//speed 2. Transfer to a bowl and set aside.
  4. Once dough has doubled in size, preheat grill to 220°C and place a baking tray in bottom of grill to heat.
  5. Place naans on preheated baking tray, in batches if necessary, and grill for 2-3 minutes (220°C) until puffed with brown patches. Turn naans over and grill for a further 2 minutes (220°C) until cooked. Transfer to a wire rack then drizzle honey and scatter flaked almonds over hot naans. Serve immediately, while still warm.
