Ingrediënten

  • pistachio nuts, unsalted
  • unsalted butter
  • caster sugar
  • self-raising flour
  • baking powder
  • large eggs
  • pistachio nut extract
  • mascarpone
  • double cream
  • icing sugar

Bereidingswijze

  1. Preheat oven to 170°C and line a 12 hole muffin tin with paper muffin cases.
  2. Place pistachio nuts in mixing bowl and grind 10 sec/speed 10. Remove 1 Tbsp to a bowl and set aside for decoration.
  3. Add butter, sugar, flour, baking powder, eggs and pistachio extract then mix 30 sec/speed 4. Scrape down sides of mixing bowl with spatula then mix again 30 sec/speed 4. Divide evenly between prepared cases. Bake for 22-25 minutes (170°C) until springy to touch and a skewer inserted in centre comes out clean. Meanwhile, clean mixing bowl.
  4. Place mascarpone, cream, icing sugar and pistachio extract in mixing bowl then mix 30 sec/speed 3. Scrape down sides of mixing bowl with spatula then mix again 20 sec/speed 3.
  5. Serve or store in an airtight container in fridge until needed, removing 30 minutes before serving to bring back to room temperature.
