Pistachio Ice Cream

Ingrediënten
- pistachio nuts, unsalted, shelled
- golden caster sugar
- whole milk
- evaporated milk
- double cream
- cornflour
Bereidingswijze
- Place pistachio nuts and 50 g sugar in mixing bowl then grind 10 sec/speed 10. Scrape down sides of mixing bowl with spatula.
- Add remaining 150 g sugar, whole milk, evaporated milk, cream and cornflour mixture then cook 8 min/90°C/speed 3. Pour mixture into a shallow freezer-proof container. Leave to cool completely before placing in freezer overnight or for at least 10 hours.
- To serve, remove from freezer and leave at room temperature for 5-10 minutes, then tip out and cut in pieces (3 cm). Place half the frozen ice cream pieces in mixing bowl, crush 20 sec/speed 6 then churn 10 sec/speed 4. Transfer to a bowl and set aside.
- Place remaining frozen ice cream pieces in mixing bowl, crush 20 sec/speed 6 then churn 10 sec/speed 4. Transfer to bowl with ice cream and serve immediately, with a scattering of extra pistachio nuts.
