Ingrediënten

  • pistachio nuts, unsalted, shelled
  • white chocolate
  • double cream
  • unsalted butter
  • natural almond extract
  • blanched almonds
  • icing sugar
  • vinegar
  • egg whites
  • caster sugar

Bereidingswijze

  1. Place pistachios in mixing bowl and grind 10 sec/speed 10. Transfer to a bowl and set aside.
  2. Place chocolate in mixing bowl and chop 6 sec/speed 8. Scrape down sides of mixing bowl with spatula.
  3. Add cream and butter then melt 3 min/50°C/speed 2.
  4. Add 25 g ground pistachios and almond extract then mix 1 min/speed 2.5 until creamy. Transfer ganache to a bowl and leave to cool in fridge. Clean and dry mixing bowl then continue with recipe.
  5. Line baking trays (for approx. 60 macaron halves, see tip), with silicone mats. Prepare a large piping bag with a plain nozzle (Ø 8 mm), then place in a tall container or jug.
