Pork Fillet with Red Wine Sauce and Vegetables

Ingrediënten
- shallots
- red wine
- carrots
- pork fillet
- salt
- ground black pepper
- water
- meat stock paste
- juniper berries (optional)
- cherry jam
Bereidingswijze
- Place shallots and red wine in mixing bowl. Place Varoma dish into position and add carrots to it. Season pork with salt and pepper. Place in Varoma dish with carrots, set Varoma in position then cook 10 min/Varoma/speed 1. Remove Varoma.
- Add 100 g water, meat stock paste and juniper berries (if using) to mixing bowl. Set Varoma back in position and cook 10-15 min/Varoma/speed 1, depending on desired cooking point of meat (see tip). Set covered Varoma aside on a plate to keep meat warm. Strain steaming liquid through simmering basket into a bowl.
- Place strained steaming liquid, cherry jam and butter in mixing bowl. Place a small bowl on mixing bowl lid, weigh in remaining 30 g water, add cornflour to it and stir together. Add cornflour-water mixture to mixing bowl and cook 8 min/100°C/speed 1.
- Blend sauce 20 sec/speed 7. Cut pork fillet in slices (2 cm) and arrange with carrots in a serving dish. Transfer sauce to a gravy boat and serve hot with pork and carrots.
