  • pork tenderloin
  • fine sea salt
  • ground black pepper
  • onions
  • unsalted butter
  • frozen green peas
  • fresh parsley leaves
  • water
  • puff pastry
  • breadcrumbs

Bereidingswijze

  1. Melt 1 Tbsp butter in a large frying pan over a high heat. Season pork tenderloin with pepper and 1 tsp salt, then cook for 3-5 minutes until golden brown on all sides. Transfer to a wire rack and leave to cool completely. Meanwhile, continue with recipe.
  2. Place onions in mixing bowl and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  3. Add 20 g butter and sauté 5 min/120°C/speed 1.
  4. Add peas, parsley, water and ¼ tsp salt then purée 5 sec/speed 6. Scrape down sides of mixing bowl with spatula then purée again 5 sec/speed 6.
  5. Preheat oven to 220°C and line a baking tray with baking paper or silicone baking mat.
