Potato, Bacon and Cheese Tortilla

Ingrediënten
- floury potatoes
- water
- onions
- olive oil
- medium eggs
- baking powder
- fine sea salt
- garlic clove
- bacon lardons
- mozzarella
Bereidingswijze
- Place potatoes and water in mixing bowl, then chop 2 sec/speed 5. Transfer potatoes to simmering basket and drain. Cut any pieces which might be too big into smaller pieces, then rinse potatoes under cold, running water until water runs completely clear. Set aside to drain.
- Place onions in mixing bowl and chop 2 sec/speed 5. Scrape down sides of mixing bowl with spatula.
- Add oil and sauté 8 min/120°C//speed 1.
- Insert butterfly whisk. Add drained potatoes and cook 16 min/100°C//speed . Remove butterfly whisk. Place simmering basket over a bowl, transfer potatoes to simmering basket and allow oil to drain into bowl underneath. Set oil aside and transfer potatoes to another bowl.
- Place eggs, baking powder and salt in mixing bowl, then whisk 10 sec/speed 3. Transfer to bowl with potatoes and mix with spatula.
