Ingrediënten

  • pork fillet
  • dry cider
  • onions
  • garlic clove
  • Dijon mustard
  • dark brown sugar
  • fine sea salt
  • ground black pepper
  • lard
  • fresh tarragon

Bereidingswijze

  1. Place pork and cider in mixing bowl then cook 30 min/80°C//speed . Strain through simmering basket, collecting the cooking liquid in a bowl below.
  2. Place cooked pork back in mixing bowl and shred 4 sec//speed 4. Transfer to a bowl and set aside.
  3. Place 180 g reserved cooking liquid, onions, garlic, mustard, sugar, salt and pepper in mixing bowl then chop 30 sec/speed 10.
  4. Add lard, tarragon leaves and reserved shredded pork then cook 20 min/90°C//speed 2. Serve hot.
