- caster sugar
- unsalted butter
- plain flour
- fine sea salt
- egg yolk

Bereidingswijze
- Place sugar in mixing bowl and grind 10 sec/speed 10.
- Add butter, flour, salt, egg yolk and vanilla then mix 45 sec/speed 5. Tip out and bring together into a ball then wrap in reusable wrap or cling film and refrigerate for 20 minutes.
- Preheat oven to 180°C. Grease a tart tin and set aside.
- On a lightly-floured surface roll out dough to a thickness of 5 mm. Line prepared tart tin with dough. Prick pastry using a fork to avoid air bubbles. Bake pastry for 20-25 minutes (180°C) until golden brown. Meanwhile continue with filling.
- Place 120 g sugar and lemon peel in mixing bowl then grind 20 sec/speed 10.
