Ingrediënten

  • rhubarb
  • golden caster sugar
  • almonds
  • orange
  • large eggs
  • baking powder
  • unsalted butter
  • self-raising flour
  • flaked almonds

Bereidingswijze

  1. Preheat oven to 180°C. Grease sides and line base of a springform tin (Ø 20 cm) with baking paper.
  2. Place almonds and orange peel in mixing bowl then grind 10 sec/speed 10.
  3. Add eggs, baking powder, remaining 150 g sugar, butter, flour and orange juice then mix 20 sec/speed 5. Scrape down sides of mixing bowl with spatula and mix again 10 sec/speed 5.
  4. Add reserved rhubarb and sugar then fold in gently with spatula. Transfer to prepared tin and sprinkle with flaked almonds. Bake for 50-60 minutes (180°C) until golden brown and cooked through. Cool in tin for 20 minutes before removing to a wire rack.
