Ingrediënten

  • mixed fresh mushrooms
  • unsalted butter
  • fresh thyme leaves
  • stale bread
  • lemon
  • fine sea salt
  • ground black pepper
  • pork loin
  • celery
  • carrots

Bereidingswijze

  1. Place 1 garlic clove in mixing bowl and chop 5 sec/speed 5 . Scrape down sides of mixing bowl with spatula.
  2. Add mushrooms and chop 13 sec/speed 4. Scrape down sides of mixing bowl with spatula.
  3. Add 20 g butter and thyme then, with simmering basket in place of measuring cup, sauté 10 min/100°C//speed .
  4. Add bread, lemon zest, ½ tsp salt and ½ tsp pepper then mix 20 sec/speed 3. Transfer to a bowl and set aside to cool for 10 minutes. Meanwhile, clean mixing bowl. Preheat oven to 180°C.
  5. Spread the mushroom stuffing over pork loin. Season with remaining ½ tsp salt and remaining ½ tsp pepper then roll the meat and tie into a roasting joint with kitchen string. Place the pork in a large roasting tin and then roast for 45 minutes (180°C), add cider, celery, carrots and cloves from 1 bulb of unpeeled garlic, reserving 2 for purée then roast for a further 45 minutes. Once cooked, leave to rest and continue with recipe.
