Roasted Pork and Apples with Butternut Squash Purée

Ingrediënten
- cider vinegar
- runny honey
- wholegrain mustard
- olive oil
- pork chops

Bereidingswijze
- Place all marinade ingredients in mixing bowl and mix 5 sec/speed 6. Transfer to a large bowl, add pork chops and stir with spatula to coat. Cover with reusable wrap or cling film and place in fridge for 30 minutes. Towards the end of this time, preheat oven to 180°C.
- Arrange onion, apples and marinated pork chops in a large baking dish then sprinkle over sage and season with salt and pepper. Pour over cider, cover with foil then roast for 30 minutes (180°C) then remove foil and roast for a further 10-15 minutes (180°C) until pork is cooked thoroughly. Meanwhile, clean mixing bowl and make butternut squash purée.
- Place butternut squash and milk in mixing bowl then cook 13 min/100°C/speed 1. Meanwhile, place spinach in Varoma dish.
- Place covered Varoma into position and cook 5 min/100°C/speed 1. Remove Varoma, transfer spinach to a bowl and set aside to keep warm.
- Add butter, salt and pepper to mixing bowl then blend 10 sec/speed 6. Transfer to a serving dish and keep warm until pork is cooked.
