Ingrediënten

  • potatoes
  • butternut squash
  • carrots
  • vegetable oil
  • ground black pepper
  • fine sea salt
  • green cardamom pods
  • poppy seeds
  • cloves
  • brown onions

Bereidingswijze

  1. Preheat oven to 200°C and line a large baking tray with baking paper or a silicone baking mat.
  2. Place prepared baking tray on mixing bowl lid. Weigh potatoes, butternut squash and carrots onto prepared tray. Drizzle with 1 Tbsp oil, season with pepper and 1 tsp salt then set aside.
  3. Place cardamom, poppy seeds and cloves in mixing bowl then, with simmering basket on mixing bowl lid, toast 2 min/120°C//speed 1. Transfer to a bowl and set aside.
  4. Place onions and 20 g oil in mixing bowl then chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula then chop again 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  5. Add reserved toasted spices, cashew nuts, almonds, bay leaf and remaining 10 g oil then, with simmering basket on mixing bowl lid, cook 7 min/120°C//speed 2. Carefully discard bay leaf. Transfer to a bowl and set aside.
