Root Veggie Gratin with Blue Cheese

Ingrediënten
- garlic cloves
- shallot
- olive oil
- water
- vegetable stock paste
- blue cheese
- plain flour
- unsalted butter
- double cream
- ground white pepper
Bereidingswijze
- Preheat oven to 180°C. Grease 'Anna' casserole dish and set aside.
- Place garlic and shallot in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl using spatula.
- Add olive oil and sauté 4 min/120°C/speed 1.
- Add water, vegetable stock, blue cheese, flour, butter, cream, pepper and nutmeg to mixing bowl then heat 10 min/90°C/speed 3. Meanwhile arrange 400 g potatoes, peeled and thinly sliced, 400 g parsnips, peeled and thinly sliced, and 400 g sweet potatoes, peeled and thinly sliced in prepared 'Anna' casserole dish, layering overlapping slices around the edges and spiralling in towards the centre.
- Bake for 30-40 minutes (180°C) or until golden brown.
