Ingrediënten

  • wheat grains
  • water
  • fresh yeast
  • buttermilk
  • bread flour
  • salt
  • balsamic vinegar
  • diastatic malt powder (optional)

Bereidingswijze

  1. Place 200 g wheat grains in mixing bowl and grind 1 min/speed 10. Transfer to a large bowl.
  2. Again place 200 g wheat grains in mixing bowl and grind 1 min/speed 10. Transfer to the large bowl.
  3. Again place remaining 200 g wheat grains in mixing bowl, grind 1 min/speed 10, transfer to the large bowl and set aside.
  4. Place water, yeast and buttermilk in mixing bowl and warm 2 min/37°C/speed 2.
  5. Add reserved ground wheat grains, bread flour, salt, balsamic vinegar and malt powder. Knead Dough /3 min then allow to rise in mixing bowl with lid on until dough rises to top of bowl (approx. 30 minutes).
