Ingrediënten
- wheat grains
- water
- fresh yeast
- buttermilk
- bread flour
- salt
- balsamic vinegar
- diastatic malt powder (optional)
Bereidingswijze
- Place 200 g wheat grains in mixing bowl and grind 1 min/speed 10. Transfer to a large bowl.
- Again place 200 g wheat grains in mixing bowl and grind 1 min/speed 10. Transfer to the large bowl.
- Again place remaining 200 g wheat grains in mixing bowl, grind 1 min/speed 10, transfer to the large bowl and set aside.
- Place water, yeast and buttermilk in mixing bowl and warm 2 min/37°C/speed 2.
- Add reserved ground wheat grains, bread flour, salt, balsamic vinegar and malt powder. Knead Dough /3 min then allow to rise in mixing bowl with lid on until dough rises to top of bowl (approx. 30 minutes).
