Ingrediënten

  • chicken legs, skin on
  • fine sea salt
  • ground black pepper
  • red pepper
  • tomatoes
  • ground cumin
  • ground cinnamon
  • ground cayenne pepper (optional)
  • olive oil
  • garlic clove

Bereidingswijze

  1. Preheat oven to 200°C. Place chicken legs in a deep baking dish, season with 1 tsp salt and ½ tsp pepper then set aside.
  2. Place red pepper, tomatoes, cumin, cinnamon, cayenne pepper (if using), 1 garlic clove and 20 g oil in mixing bowl then chop 5 sec/speed 5. Sauté 3 min/120°C/speed 2 then blend 30 sec/speed 7. Pour sauce over chicken.
  3. Bake for 35-40 minutes (200°C). Meanwhile, clean and dry mixing bowl. Continue with recipe.
  4. Place cashew in mixing bowl and chop 2 sec/speed 6. Add apricots, almonds and raisins then transfer to a large bowl and set aside.
  5. Place onion, 20 g oil and remaining 1 garlic clove in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
