Saffron Quinoa with Baked Chicken in Red Pepper and Tomato Sauce

Ingrediënten
- chicken legs, skin on
- fine sea salt
- ground black pepper
- red pepper
- tomatoes
- ground cumin
- ground cinnamon
- ground cayenne pepper (optional)
- olive oil
- garlic clove
Bereidingswijze
- Preheat oven to 200°C. Place chicken legs in a deep baking dish, season with 1 tsp salt and ½ tsp pepper then set aside.
- Place red pepper, tomatoes, cumin, cinnamon, cayenne pepper (if using), 1 garlic clove and 20 g oil in mixing bowl then chop 5 sec/speed 5. Sauté 3 min/120°C/speed 2 then blend 30 sec/speed 7. Pour sauce over chicken.
- Bake for 35-40 minutes (200°C). Meanwhile, clean and dry mixing bowl. Continue with recipe.
- Place cashew in mixing bowl and chop 2 sec/speed 6. Add apricots, almonds and raisins then transfer to a large bowl and set aside.
- Place onion, 20 g oil and remaining 1 garlic clove in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
