Ingrediënten

  • wholegrain mustard
  • honey
  • white wine vinegar
  • fine sea salt
  • ground black pepper
  • water
  • medium eggs
  • bread
  • smoked salmon
  • fresh parsley

Bereidingswijze

  1. Place mustard, honey, vinegar, salt and pepper in mixing bowl then mix 15 sec/speed 4. Transfer to a small serving bowl and set aside.
  2. Place water in mixing bowl then insert simmering basket. Place 8 eggs in simmering basket and steam 11 min/Varoma/speed 1.
  3. Place bread in mixing bowl and grate 15 sec/speed 7. Transfer to a bowl and set aside.
  4. Place salmon, parsley, remaining 2 eggs, 100 g reserved breadcrumbs, salt and pepper in mixing bowl then mix 5 sec/speed 8. Tip out onto a chopping board or work surface.
  5. Heat oil in a deep saucepan or deep fat fryer to 175°C. Fry eggs in batches for 1-2 minutes turning continuously. Remove from oil and drain on paper towels. Serve with reserved sauce and a salad.
