Salmon with Grapefruit Quinoa

Ingrediënten
- blanched almonds
- spring onions
- olive oil
- quinoa
- vegetable stock paste, homemade
- water
- ground black pepper
- salmon fillets
- Dijon mustard
- fine sea salt
Bereidingswijze
- Place almonds in mixing bowl then chop 10 sec/speed 5. Transfer to a bowl and set aside.
- Place spring onions and oil in mixing bowl then chop 4 sec/speed 5. Scrape down sides of mixing bowl with spatula then sauté 5 min/120°C//speed 1.
- Add quinoa, vegetable stock, water and ½ tsp pepper then cook 15 min/100°C//speed 1. Transfer to a bowl and set aside. Meanwhile, continue with recipe. Preheat oven to 180°C.
- Grease a baking dish. Brush salmon with mustard and season with 1 tsp salt and ½ tsp pepper. Drizzle with remaining 2 tsp olive oil and bake for 20 minutes (180°C).
- Peel grapefruit so pith is completely removed, cut 2 slices and set aside. Place the remaining grapefruit, olives, mint, red wine vinegar, remaining 20 g oil, remaining ¼ tsp salt and remaining ¼ tsp pepper in mixing bowl then chop 10 sec/speed 4.
