Salmon with Sticky Tomato Glaze

Ingrediënten
- fresh root ginger
- garlic clove
- fresh coriander
- fresh red chilli
- plum tomatoes
- red wine vinegar
- dark brown sugar
- fresh salmon fillets
- tenderstem broccoli
- water
Bereidingswijze
- Place ginger, garlic, coriander, chilli, tomatoes, vinegar and sugar in mixing bowl then blend 5 sec/speed 9. Heat 7 min/120°C/speed 1.
- Cut 4 pieces of baking paper (approx. 20 cm x 25 cm) and place a salmon fillet on each. Pour prepared glaze over each fillet and bring paper edges together to create a parcel. Place parcels in Varoma dish, leaving holes free for steam to circulate. Insert Varoma tray and place broccoli onto it then cover Varoma and set aside.
- Place water in mixing bowl. Insert simmering basket, weigh rice into it and rinse 10 sec/speed 5. Steam 15 min/Varoma/speed 2.
- Place covered Varoma into position above rice and steam above rice 8 min/Varoma/speed 2. Serve salmon garnished with thin slices of red chilli and spring onion accompanied by the rice and broccoli.
