Ingrediënten
- amaretti biscuits
- whipping cream
- medium eggs
- egg yolks
- caster sugar
- sweet Marsala wine
- flaked almonds
Bereidingswijze
- Place 85 g amaretti biscuits into mixing bowl and grind Turbo/2.0 sec/3 times until fine. Transfer to a bowl and set aside.
- Insert butterfly whisk. Place cream in mixing bowl and whip 40 sec/speed 3. If necessary, whip again speed 3, stopping the motor and checking every 5-10 seconds until soft peaks form, avoiding over-whipping. Transfer to a bowl and set aside.
- With butterfly whisk still in place, place eggs, egg yolks, sugar and Marsala in mixing bowl then cook 8 min/80°C/speed 3. Remove butterfly whisk and transfer mixture to a large bowl then set aside to cool.
