Simnel Cake

Ingrediënten
- sultanas
- currants
- chopped mixed peel
- glacé cherries
- brandy
- granulated sugar
- blanched almonds
- egg yolks
- lemon juice
- orange blossom water
Bereidingswijze
- Place 100 g sugar in mixing bowl and grind to caster sugar 5 sec/speed 10. Transfer to a bowl and set aside.
- Place remaining 140 g sugar in mixing bowl and grind to icing sugar 1 min/speed 10. Transfer to another bowl and set aside.
- Place blanched almonds in mixing bowl and grind 10 sec/speed 10.
- Add reserved caster sugar and all but 2 Tbsp reserved icing sugar then mix 10 sec/speed 3.
- Add egg yolks, lemon juice, orange blossom water, vanilla extract and almond extract then knead Dough /1 min until a rough paste is formed (see tip). Tip out, wrap in cling film and set aside.
