Ingrediënten
- milk
- unsalted butter
- plain flour
- large eggs
- smoked mackerel
- crème fraîche
- ground black pepper
- fresh tarragon leaves
- water
Bereidingswijze
- Place milk in mixing bowl and heat 5 min/90°C/speed 1. Meanwhile, preheat oven to 180°C and grease 4 ramekins (200 ml each) with butter then set aside. Transfer warm milk to a jug.
- Place butter in mixing bowl and melt 1 min/100°C/speed .
- Add flour and stir 10 sec/speed 2. Scrape down sides of mixing bowl with spatula.
- Add reserved milk then cook 3 min/100°C/speed 2.
- Add 3 egg yolks, mackerel, crème fraîche, tarragon and pepper then mix 10 sec//speed 1. Transfer to a large jug. Clean and dry mixing bowl.
