Ingrediënten

  • milk
  • unsalted butter
  • plain flour
  • large eggs
  • smoked mackerel
  • crème fraîche
  • ground black pepper
  • fresh tarragon leaves
  • water

Bereidingswijze

  1. Place milk in mixing bowl and heat 5 min/90°C/speed 1. Meanwhile, preheat oven to 180°C and grease 4 ramekins (200 ml each) with butter then set aside. Transfer warm milk to a jug.
  2. Place butter in mixing bowl and melt 1 min/100°C/speed .
  3. Add flour and stir 10 sec/speed 2. Scrape down sides of mixing bowl with spatula.
  4. Add reserved milk then cook 3 min/100°C/speed 2.
  5. Add 3 egg yolks, mackerel, crème fraîche, tarragon and pepper then mix 10 sec//speed 1. Transfer to a large jug. Clean and dry mixing bowl.
