Smoked Salmon Pizza

Ingrediënten
- water
- sugar
- dried instant yeast
- extra virgin olive oil
- spelt flour
- fine sea salt
- mozzarella
- cherry tomatoes
- tomato purée
- balsamic vinegar
Bereidingswijze
- Place 50 g water, sugar and yeast in mixing bowl then warm 2 min/37°C/speed 2. Meanwhile, grease a large bowl with oil.
- Add remaining 220 g water, oil, flour and salt then knead Dough /1 min 30 sec. Transfer dough to prepared bowl, cover with cling film then set aside to rise in a warm place until doubled in size (approx. 1-2 hours). Towards end of rising time, prepare topping.
- Place mozzarella in mixing bowl and chop 5 sec/speed 5. Transfer to a bowl and set aside.
- Place tomatoes, tomato purée, vinegar, garlic, basil, oregano, sugar, 2 pinches salt and chilli in mixing bowl then chop 4 sec/speed 6.
- Preheat oven to 230°C and generously grease 2 large baking trays with oil.
