Ingrediënten

  • olive oil
  • garlic clove
  • whole squid, medium
  • raw, unpeeled large prawns
  • white wine
  • water
  • fresh mussels
  • Spanish onions
  • garlic cloves
  • smoked paprika

Bereidingswijze

  1. Place 25 g oil and 1 garlic clove in mixing bowl then sauté 2 min/120°C/speed .
  2. Add white wine and water then chop 2 sec/speed 5.
  3. Place Varoma dish into position, weigh in mussels then steam 12 min/Varoma//speed 2. Remove Varoma lid and stir mussels with spatula so cooking liquid drops into mixing bowl. Set Varoma aside. Strain cooking liquid through a fine-mesh sieve set over a jug then discard solids and set stock aside.
  4. Add paprika and saffron, sauté 1 min/120°C/speed 1 then chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  5. Add tomato purée and choricero pepper pulp then sauté 3 min/120°C/speed 1. Meanwhile, pick mussels from shells and transfer to a bowl. Discard mussel shells.
