Ingrediënten

  • plain flour
  • medium eggs
  • whole milk
  • sunflower oil
  • water
  • fine sea salt
  • asparagus
  • pine nuts
  • wild garlic leaves
  • onion

Bereidingswijze

  1. Place 300 g flour, eggs, milk, 30 g oil, 60 g water and 1 tsp salt in mixing bowl then mix 10 sec/speed 4. Scrape down sides of mixing bowl with spatula then mix again 10 sec/speed 4. Transfer to a bowl and set aside. Clean mixing bowl.
  2. Place wild garlic and onions in mixing bowl then chop 3 sec//speed 6. Scrape down sides of mixing bowl with spatula.
  3. Add remaining 20 g oil and 10 g flour then sauté 5 min/120°C/speed 2.
  4. Add water, stock paste, pepper and ½ tsp salt then cook 20 min/120°C/speed 1. Towards the end of this time, bring a deep saucepan, ¾ full with water and remaining 1 Tbsp salt added, to a simmer.
  5. Add cream, red pepper and prepared asparagus mixture then cook 7 min/100°C//speed . Meanwhile, place ¼ of the batter into Varoma dish. Carefully position Varoma dish slightly above the pan of simmering water and, in quick motions using a dough scraper, push batter through Varoma into the simmering water. Spätzle will rise to the surface when cooked. Remove with a slotted spoon and transfer to a large bowl to keep warm. Repeat with remaining spätzle batter.
