Ingrediënten
- fresh coriander
- fat-free plain yoghurt
- wholemeal bread
- water
- carrots
- ground cumin
- ground coriander
- fine sea salt
- ground black pepper
- ground turmeric
Bereidingswijze
- Place coriander in mixing bowl and chop 3 sec/speed 7. Transfer to a bowl, place bowl on mixing bowl lid and weigh in yoghurt. Stir to combine, cover with cling film and place in fridge until needed.
- Place bread in mixing bowl and chop 3 sec/speed 7. Transfer to a bowl and set aside.
- Place water in mixing bowl. Insert simmering basket and weigh in 250 g carrots then steam 12 min/Varoma/speed 1. Remove simmering basket with aid of spatula and discard steaming water.
- Place remaining 250 g carrots, steamed carrots, cumin, coriander, salt, pepper and turmeric in mixing bowl then mix 3 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add spring onions, egg, reserved breadcrumbs and chilli flakes (if using) then mix 20 sec/speed 3. Roll tablespoons of mixture into small flat discs (approx. 25 g each, 1 cm thick) and place on a plate until all mixture has been used (approx. 26 patties). Place in fridge for 30 minutes.
