Spring Chicken Casserole

Ingrediënten
- plain flour
- fine sea salt
- ground black pepper
- chicken thighs, boneless
- olive oil
- onions
- celery stalks
- carrots
- chicken stock
- fresh thyme
Bereidingswijze
- Heat 3-4 Tbsp oil in a large cast-iron or aluminium casserole dish then fry floured chicken until golden on all sides. Set aside. Meanwhile preheat oven to 180°C.
- Place onions, celery, carrots and 15 g oil in mixing bowl then chop 5 sec/speed 4.5. Scrape down sides of mixing bowl with spatula.
- Add stock, thyme, ¼ tsp salt and ¼ tsp pepper then cook 8 min/100°C/speed 1.
- Add potatoes to casserole dish, then cover with prepared vegetable broth. Bake for 50-60 minutes (180°C) until potatoes and chicken are cooked.
- Remove casserole dish from oven and stir in peas. Replace lid and allow to rest for 5 minutes before serving.
