Steak and Kidney Pudding

Ingrediënten
- olive oil
- onions
- garlic cloves
- stewing steak
- lamb's kidneys
- plain flour
- fine sea salt
- ground black pepper
- fresh thyme
- dried bay leaf
Bereidingswijze
- Place oil, onions and garlic in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula then sauté 5 min/120°C/speed 1.
- Add to mixing bowl seasoned beef and kidneys, thyme leaves, bay leaf, Worcestershire sauce, tomato purée, wine and stock then cook 90 min/100°C//speed . Transfer to a bowl and allow to cool. Meanwhile, clean mixing bowl and make pastry.
- Place flour, suet, salt and pepper in mixing bowl then mix 4 sec/speed 4.
- Add water and mix 15 sec/speed 4. Tip out, bring together into a ball, then wrap in cling film and allow to rest in fridge for 20 minutes. Meanwhile, grease a 1 litre pudding basin.
- Cover basin with a large circle of baking paper, with a pleat in the middle to allow for pudding to expand. Cover baking paper with a circle of aluminium foil, again with a pleat in the middle. Secure both with string then place pudding into Varoma dish.
