Ingrediënten

  • vegetable oil
  • water
  • plain flour
  • vegetable oil
  • fine sea salt
  • water
  • white cabbage leaves
  • fine sea salt
  • pork mince
  • water

Bereidingswijze

  1. Place water, flour, oil and salt in mixing bowl and knead Dough /2 min. If dough seems dry, add 10 g water (2 tsp) and knead a further Dough /1 min. Transfer dough to prepared small bowl and form into a ball. Cover bowl and allow to rest for 15 minutes. Meanwhile, prepare filling.
  2. Place white cabbage leaves and 1 tsp salt in mixing bowl then chop 20 sec/speed 4. Transfer to simmering basket and set aside to drain.
  3. Place pork mince, 30 g water, soy sauce, rice wine, sugar, remaining ½ tsp salt, pepper and sesame oil in mixing bowl and mix 2 min/speed 4. Scrape down sides of mixing bowl with spatula.
  4. Squeeze excess moisture out of cabbage by pressing it against sides of simmering basket, add cabbage to mixing bowl and mix 6 sec//speed 6. Transfer filling to a large plate and set aside. Clean mixing bowl.
  5. Place 500 g water in mixing bowl, set Varoma in position and steam 20 min/Varoma/speed 1. Remove Varoma and serve dumplings hot.
