Ingredients

  • non-stick spray oil
  • mozzarella for pizza (low-moisture mozzarella)
  • red bell peppers
  • red onion
  • vegetable oil
  • bacon, sliced
  • eggs
  • Dijon mustard
  • salt
  • black pepper, ground

Instructions

  1. Place mozzarella into mixing bowl and grate 5 sec/speed 7. Transfer to a bowl and set aside.
  2. Place bell peppers, onion and oil into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  3. Add bacon and cook 5 min/120°C//speed 1. Place 1 tbsp of mixture into each Thermomix® Nester pocket. Place remaining mixture in a bowl and set aside.
  4. Place eggs, Dijon, salt and pepper into mixing bowl, insert measuring cup and mix 10 sec/speed 4. Divide mixture between egg cups with meat mixture. Sprinkle with reserved cheese and remaining bell pepper mixture and set aside.
  5. Place water into mixing bowl. Set Varoma tray with Nester into aroma dish. Secure Varoma lid, place on top of mixing bowl and steam 20 min/Varoma/speed 1. Carefully remove Nester from Varoma and allow to cool 2-3 minutes. Invert onto a plate to unmould, garnish with fresh herbs and serve hot.
